Cardamom

This is another spice item, which is grown in the central hill country.  The flavour of cardamom is present almost entirely in the seeds within the capsule.  The fruit dried in the sun or artificially is used as a spice to flavour food.

Cloves

This too is grown in the hill country.  The dried flower bud is used extensively as a spice to flavour food.

Pepper

Known as the king of spices, this too is grown in the central hill country.  It comes from a climbing vine and with its excellent quality and rich flavour, black pepper is probably the most used spice on earth.
